Pulled pork with root beer sauce

This is a recipe my mom gave me and it is hmmmm good.My mom is a recipe collector as well. I think she got this recipe from a taste of home magazine but not for sure.

Pulled pork With root beer sauce

1 Tablespoon olive or vegetable oil
1 boneless pork loin roast (3 pounds)
2 teaspoon salt
1/2 teaspoon pepper
1 meduim onion, chopped ( 1/2 cup)
2 cans (12 oz) root beer
1 bottle (12 oz ) chili sauce
1/2 teaspoon salt
12 sandwich buns

1. In 10-inch skiller, heat oil over high heat. Cook pork roast in oil 6-10 minutes or until brown on all sides.
2.In 3-4 quart slow cooker, place roast, 2 teaspoon salt, pepper, onion, and 1 cup of root beer. Cover and cook on low heat setting 7-8 hours.
3. About 30 minutes before serving, in 4 quart saucepan or dutch oven, heat remaining 2 cup root beer, chili sauce and 1/2 teaspoon salt to boiling over meduim heat. Reduce heat to med. Cook over low heat 8-10 minutes, stirring occassionally until mixture is glossy and reduced 2 1/2 -3 cups.
4. Remove pork from slow cooker, discarding cooking liquid .Shred pork, using 2 forks to pull aprt. Stir in chili sauce mixture. To serve, spoon 1/2 cup pork in each bun.


I think this recipe might be good with other types of meat as well. Today I am cooking it with vension, so we will see.
